Zucchini Wrapped Chicken Enchiladas

Ingredients

• Enchilada Sauce

1. 5 cloves garlic
2. 1/2 tbsp vegetable oil
3. 1 giant onion
4. 2 jalapeños ( counting on desired spiciness)
5. 2 15oz cans sliced tomatoes
6. 1 one/4 cups chicken stock
7. 1 tbsp cumin
8. 1/2 tsp hot pepper powder
9. 1/4 tsp salt

• Enchiladas

1. 3 cups sliced chicken
2. 3 giant zucchini
3. 1/2 cup grated store cheese (optional) (omit if paleo or whole30)
