Poached Salmon in Coconut Lime Sauce



Poached Salmon in a very coconut lime sauce that tastes sort of a Thai coconut curry - except it's super fast and simple to make! although the salmon is cooked, it's well price searing gently to brown for the additional flavour on each the salmon and within the sauce.


Ingredients
  1. 4 salmon fillets , 180g/6oz every ideally skinless (Note 1)
  2. Salt and pepper
  3. 2 tbsp oil , separated
  4. 2 garlic cloves , finely grated
  5. 2 tsp ginger , finely grated
  6. 1 lemongrass , peeled, finely grated (Note 2)
  7. 1 tbsp refined sugar
  8. 1 tsp chile garlic paste or different chile paste, fits style (Note 3)
  9. 400 g/14oz coconut milk (Note 2)
  10. 1 tbsp fish sauce (or soy sauce)
